The main ingredients of this traditional sweet are the round hazelnuts of the Langhe a variety of of IGP Piedmont Hazelnut produced in the southern Piedmont.
Preparations: Coarsely chop the skinned and roasted hazelnuts and add them to the beaten eggs. Add the flour, sugar, milk, softened butter, and other ingredients… The result is a dark ochre cake, a dry, thin and crumbly cake excellent ate alone and delicious with zabaione or a glass of Passito or Moscato wine.
