The Piedmontese is a breed of domestic cattle with a unique somatic feature, an hypertrophy of the thigh muscles, due to natural genetic mutation.
Today, the Piedmontese breed called “Fassone” produces a high level of meat: tender, lean and low in fat but with high nutritional quality and it is the principal ingredient of some dishes of the cuisine of the Langhe: such as the Carne cruda, a row meat salad, the vitello tonnato, veal with a tuna sauce with capers, the Gran bollito misto, mixed boiled meat or the brasato, a roasted meat cooked with Barolo the mixed boiled meat
